Gourmet!

Since I have become a wife, I have loved becoming a homemaker. Seriously. It may be weird, and perhaps it'll wear off (I doubt it!) but it's true! I love cleaning and laundry and organizing (and, like my blogging friend Amy, I get a little crazy at times).
Anyway, my absolute favorite part so far has been cooking! I received lots of cookbooks for the wedding, and I just love them. Don't get me wrong, I'm no Julie Powell, but I have been trying out lots of new recipes.
Here are some that went well, and/or not so well (but my husband will never tell me):
  • Crispy-Skinned Chicken a l'Orange - this turned out lovely after we had to put it back in the oven three or four times. The chicken was pink and I had not yet bought a meat thermometer (consequently, I have one now).

  • Twice Baked Potatoes - I made these with Chelsie Denson and they were so lovely. However, potatoes take forever to bake, and doing it twice is just a lot. You can find a good recipe here - but if you need to know where to find prosciutto, don't ask me!
  • Pork Tenderloin - Crockpot - I glazed this with brown sugar, lemon juice, and a small amount (teaspoon?) of Dijon mustard. Yum. The last hour that you bake it in the crockpot, drain the juice and add more brown sugar on the top. This had no complaints. Plus, it's a really great cut of meat.
  • Pork Tenderloin - Baked - First, I browned the edges in a frying pan. Afterwards, I salted and peppered it liberally and put it in my Pyrex baking dish. I blended one can of Pepsi, 2 cloves of peeled garlic, and some salt, pepper, onion powder, and chili powder. Then, I poured that mixture over the meat and used my newly-bought meat thermometer to cook it until the internal temperature was 160. Wonderful!!!
Anyway, I am looking for something to cook tonight.

Any ideas? What is your favorite meal? Or what have you tried that doesn't work?

  1. OMGosh! This looks so yummy! One of my favorite recipes is SO easy! I buy fresh brussel sprouts. Put a little oil in the pan..add seasoning and sea salt, and bake them for about 20-25 minutes! YUM, YUM, YUM!

    Once I made joshua rice krispie chicken. I put milk and garlic seasoning in a bowl and rice krispies on a paper plate and dipped the chicken in the milk mixture and rolled the chicken in rice krispies. The rice krispies did stick because of it being wet from the milk and garlic. Put it in the oven and it tastes sooo good. :) Joshua loved it!

  3. I LOVE "Julie & Julia." (= I want Julia Child's "Mastering the Art of French Cooking" to be my first cookbook I buy when I move out.

    Recipe-wise, I made dinner for Josh & my family one night. I was in the mood for tacos, but not regular "ground beef" tacos. I wanted it to be more along the lines of seafood. So, I got a 1/2lb.-1lb of tilapia fish filets from Publix, some Old Bay seasoning, a few lemons, a bag of baby spinach [which must be used the same day it is bought or it's not that great anymore, but you probably already knew that!], tortillas, & some regular store-bought salsa [or freshly made, whichever you & your hubby would prefer].

    I placed the tilapia in a bowl & squeezed the lemons [the lemon-to-tilapia ratio is up to you] & sprinkled a good amount of Old Bay onto the filets. I let them marinate for at least 30 minutes, then I pan-fried them with some olive oil [extra virgin would be best, but light or regular would work just as well]. Afterwards, I cut the filets in half length-wise [since it would work best for a wrapped soft taco] & let everyone dig in. I set it up with a fish filet on the bottom, baby spinach leaves on top of the fish, then salsa. You could squeeze a bit more lemon juice onto the fish prior to adding the baby spinach.

    I also had some shrimp that night, but that was mainly for Josh because he loves shrimp. (= In any case, I marinated those in lemon & soy sauce, let it sit for at least 30 minutes, & then baked them in the oven for at least 3-4 minutes or until a light pink color. Baking is quicker than boiling because I had a pound of medium-sized white shrimp [also from Publix] & boiling them or frying them would be too time-consuming.

  7. this is Megan Smith. ohhhhh girl i tried this KRAFT recipe last week so yummy and easy!!!!

    What You Need!4 small boneless skinless chicken breast halves (1 lb.) 1 pouch SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix 1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa 1/2 cup KRAFT Shredded Monterey Jack Cheese Make It!HEAT oven to 400ºF.

    COAT chicken with coating mix as directed on package. Place on baking sheet.

    BAKE 20 min. or until chicken is done (165°F).

    TOP with salsa and cheese. Bake 5 min. or until cheese is melted.

  11. Oh I love the asparagus! Yummm! This makes me think of summer...we grill out constantly. Asparagus is one of our faves on the grill. As far as what didn't work recently...I made brown rice last night with salmon. Salmon...very tasty. The brown rice was a gross mixture of soggy and crunchy. Followed package directions...but won't use the kind I did ever again. :)

  12. Hi there - I stumbled across your blog while on someone else's recently and just thought I'd give you a 'cheat' for the next time you make twice baked potatoes. The first time 'bake' them in the microwave. It takes about 5-7 minutes per potato in the microwave, then scoop out the insides and do what is needed before moving onto step 2 :) Saves a lot of time and energy!
