The first time 'bake' them in the microwave. As far as what didn't work recently...I made brown rice last night with salmon. Salmon...very tasty. The brown rice was a gross mixture of soggy and crunchy. (= I want Julia Child's "Mastering the Art of French Cooking" to be my first cookbook I buy when I move out.<br /><br />Recipe-wise, I made dinner for Josh & my family one night. I was in the mood for tacos, but not regular "ground beef" tacos. I wanted it to be more along the lines of seafood. So, I got a 1/2lb.-1lb of tilapia fish filets from Publix, some Old Bay seasoning, a few lemons, a bag of baby spinach [which must be used the same day it is bought or it's not that great anymore, but you probably already knew that!], tortillas, & some regular store-bought salsa [or freshly made, whichever you & your hubby would prefer].<br /><br />I placed the tilapia in a bowl & squeezed the lemons [the lemon-to-tilapia ratio is up to you] & sprinkled a good amount of Old Bay onto the filets. I let them marinate for at least 30 minutes, then I pan-fried them with some olive oil [extra virgin would be best, but light or regular would work just as well]. Afterwards, I cut the filets in half length-wise [since it would work best for a wrapped soft taco] & let everyone dig in. I set it up with a fish filet on the bottom, baby spinach leaves on top of the fish, then salsa. You could squeeze a bit more lemon juice onto the fish prior to adding the baby spinach.<br /><br />I also had some shrimp that night, but that was mainly for Josh because he loves shrimp. (= In any case, I marinated those in lemon & soy sauce, let it sit for at least 30 minutes, & then baked them in the oven for at least 3-4 minutes or until a light pink color. I put milk and garlic seasoning in a bowl and rice krispies on a paper plate and dipped the chicken in the milk mixture and rolled the chicken in rice krispies. The rice krispies did stick because of it being wet from the milk and garlic.
